
Wasabi Sea Snails & Prawns is a refreshing and addictive cold seafood dish. The sea snails are firm and bouncy, while the prawns are sweet and plump. Combined with the kick of wasabi, spicy chilies, and fresh lemon, it’s tangy, spicy, and absolutely irresistible.

🌴 Ingredients:
· 300g sea snails (washed)
· 300g prawns (washed, antennae trimmed)
🌴 Aromatics:
· 4 slices of ginger (for boiling seafood)
· 2 stalks of scallion (for boiling seafood)
· 5-6 cloves minced garlic
· 3-4 small spicy chilies (sliced)
· 2 stalks cilantro (chopped)
· 1 lemon (half sliced, half juiced)
🌴 Seasonings:
· 1-2 tsp wasabi (adjust to taste, the soul of the dish)
· 3 tbsp light soy sauce (about 30ml)
· 2 tbsp Chinkiang vinegar (about 20ml)
· 1 tbsp sesame oil (about 10ml)
· 1 tbsp chili oil (about 10ml, optional)
· 1 tsp sugar (about 5g, to enhance flavor)
· 1 tbsp cooking wine (about 10ml, for boiling)
· Salt, to taste
🌴 Instructions:
- Boil the Seafood
Bring a pot of water to a boil with ginger, scallion, and cooking wine. Add the sea snails and cook for 3 minutes, then transfer to ice water. Add the prawns and cook for 2 minutes, then transfer to ice water. ⚠️ Note: Never overcook them, or they will lose their texture. I’ve tried it, and the snails shriveled and the shrimp turned tough. - Make the Wasabi Sauce
In a small bowl, mix the wasabi, light soy sauce, vinegar, sesame oil, chili oil, sugar, and salt. Squeeze in the juice of half a lemon and mix well. ⚠️ Note: Adjust the wasabi to your taste, but don’t skip it; it’s the soul of this dish. - Mix and Serve
Place the sea snails and prawns in a large bowl. Add the minced garlic, chilies, cilantro, and lemon slices. Pour in the wasabi sauce and mix well. Cover and refrigerate for 30 minutes for better flavor. ⚠️ Note: Chilling for 30 minutes makes a big difference. I’ve tried eating it right away, and the flavor wasn’t fully absorbed.

The key to Wasabi Sea Snails & Prawns is “tender seafood, wasabi kick, and a tangy flavor.” Transfer the seafood to ice water after boiling for a firm, bouncy texture. Don’t skip the wasabi; it’s the soul. Chill for 30 minutes before serving for the best flavor.
