
Stir-fried King Oyster Mushroom with Green Pepper is a simple and quick home-style vegetable dish. The mushroom shreds are tender and bouncy, paired with crisp green peppers. It’s savory, slightly spicy, and perfect with steamed rice. Even though it’s a vegetarian dish, it’s as satisfying as any meat dish.

🌴 Ingredients:
· 3 king oyster mushrooms (cut into thin shreds)
· 1 green bell pepper (shredded)
· 1/2 carrot (shredded, for color)
🌴 Aromatics:
· 3-4 cloves minced garlic
· A small piece of minced ginger
· 1 stalk chopped scallion
🌴 Seasonings:
· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Prepare the Mushrooms
Wash the mushrooms and cut them into 5mm thick shreds. Shred the green pepper and carrot. ⚠️ Note: Don’t cut the mushrooms too thin, or they will shrink and lose their texture during stir-frying. I’ve tried it, and they turned mushy. - Stir-fry the Mushrooms
Heat oil in a pan, add the mushroom shreds, and stir-fry over medium heat until softened and slightly releasing water. Remove and set aside. ⚠️ Note: Cooking the mushrooms first removes excess water for a better texture. I’ve tried cooking them with the peppers directly, and it released too much water, turning it into a boiled dish. - Sauté the Aromatics
Add a little oil to the pan, sauté the garlic and ginger until fragrant. Add the carrot shreds and stir-fry for 1 minute. ⚠️ Note: Carrots take longer to cook, so add them first. - Combine and Serve
Turn to high heat, add the cooked mushroom shreds and green pepper shreds. Add the light soy sauce, oyster sauce, sugar, white pepper, and salt. Stir-fry quickly to coat the ingredients with the sauce. Sprinkle with scallion and serve. ⚠️ Note: Be quick to keep the green pepper crisp. I’ve tried cooking too long, and it turned soggy.

💡 Tips:
The key to this dish is “tender mushrooms, crisp green peppers.” Don’t cut the mushrooms too thin, and stir-fry them first to remove excess water for a better texture. Stir-fry over high heat, and add the green pepper at the end to keep it crisp.
