Stir-fried Pork Belly with Cauliflower | Savory, Crisp & Addictive

Stir-fried Pork Belly with Cauliflower is a super comforting home-style dish. The pork belly is rendered until fragrant, and the cauliflower soaks up all the meaty flavor. With garlic and chilies, it’s savory, crisp, and incredibly satisfying with steamed rice. Simple to make, yet amazingly delicious.

🌴 Ingredients:

· 150g pork belly (thinly sliced)
· 1/2 head cauliflower (about 400g, cut into small florets)

🌴 Aromatics:

· 4-5 cloves garlic (minced)
· A small piece of ginger (minced)
· 3-4 dried red chilies (cut into segments)
· 1 stalk scallion (chopped)

🌴 Seasonings:

· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml)
· 1/2 tbsp dark soy sauce (about 5ml, for color)
· 1 tbsp cooking wine (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Prepare the Cauliflower
Cut the cauliflower into small florets, wash, and drain thoroughly. ⚠️ Note: Make sure to drain the cauliflower well, or it will release water during stir-frying and turn into boiled cauliflower. I’ve tried it without draining, and it turned out watery.
  2. Render the Pork Belly
Heat a little oil in a pan, add the pork belly slices, and stir-fry over medium heat until they change color, release some fat, and the edges are slightly charred. Add the minced ginger, garlic, and dried chilies. Stir-fry until fragrant. ⚠️ Note: Make sure to render the fat from the pork belly for the best flavor. I’ve tried it without rendering, and it tasted greasy.
  3. Stir-fry the Cauliflower
Turn to high heat, add the drained cauliflower, and stir-fry quickly for 2-3 minutes until the edges are slightly charred and just tender. Add the light soy sauce, oyster sauce, dark soy sauce, cooking wine, sugar, white pepper, and salt. Stir-fry to combine. ⚠️ Note: Keep the heat high to keep the cauliflower crisp. I’ve tried low heat, and it turned mushy.
  4. Serve
Stir well, sprinkle with chopped scallion, and serve. Serve hot. ⚠️ Note: Add the scallion at the very end to keep it green and fragrant.
