Spicy Enoki Mushrooms with Minced Pork | Savory, Spicy & Addictive

Spicy Enoki Mushrooms with Minced Pork is a super comforting home-style dish. The enoki mushrooms are tender, the minced pork is crispy and savory, and the spicy chilies and rich sauce bring it all together. Every bite is packed with flavor—it’s absolutely unbeatable with steamed rice. Simple to make, yet incredibly delicious.

🌴 Ingredients:

· 1 bunch enoki mushrooms (about 200g, roots removed and chopped)
· 100g minced pork (fatty and lean)

🌴 Aromatics:

· 4-5 cloves garlic (minced)
· A small piece of ginger (minced)
· 2-3 small spicy chilies (sliced)
· 1 stalk scallion (chopped)
· 2 dried red chilies (cut into segments, optional)

🌴 Seasonings:

· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml)
· 1/2 tbsp dark soy sauce (about 5ml, for color)
· 1 tbsp cooking wine (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Prepare the Enoki Mushrooms
Remove the roots of the enoki mushrooms, wash, and cut into 1-2cm segments. ⚠️ Note: Don’t cut them too finely, or they will release too much water when stir-fried. I’ve tried cutting them too small, and they turned mushy.
  2. Stir-fry the Minced Pork
Heat oil in a pan, add the minced pork, and stir-fry over medium heat until it changes color and releases some oil. Add the minced ginger, garlic, dried chilies, and fresh chilies. Stir-fry until fragrant. ⚠️ Note: Fry the pork until slightly dry for the best aroma. I’ve tried it undercooked, and it tasted greasy.
  3. Stir-fry the Enoki Mushrooms
Turn to high heat, add the enoki mushrooms, and stir-fry quickly for 1-2 minutes until softened and slightly releasing water. Add the light soy sauce, oyster sauce, dark soy sauce, cooking wine, sugar, white pepper, and salt. Stir-fry to combine. ⚠️ Note: Keep the heat high to keep the mushrooms crisp. I’ve tried low heat, and they turned into a soup.
  4. Serve
Stir well, sprinkle with chopped scallion, and serve. Serve hot. ⚠️ Note: Add the scallion at the very end to keep it green and fragrant.
