
Pork Rib and Corn Soup is a classic and nourishing home-style soup. The ribs are braised until tender and fall-off-the-bone, and the corn is sweet and juicy. The broth is clear and comforting—perfect for warming up in autumn and winter or for everyday nourishment.

🌴 Ingredients:
· 400g pork spare ribs (cut into small pieces)
· 2 ears of sweet corn (cut into segments)
· 1 carrot (cut into chunks, optional)
🌴 Aromatics:
· 4 slices of ginger
· 1 stalk of scallion (cut into segments)
· A small handful of goji berries (optional, add before serving)
🌴 Seasonings:
· Salt, to taste (add at the end)
· A pinch of white pepper powder
· Water, as needed
🌴 Instructions:
- Blanch the Ribs
Place the ribs in a pot of cold water with ginger, scallion, and cooking wine. Bring to a boil, skim off the foam, and rinse the ribs with warm water. ⚠️ Note: Never rinse with cold water, or the meat will contract and become tough. I’ve tried it, and the ribs stayed tough even after a long braise. - Simmer the Soup
Add plenty of water to a pot with the blanched ribs, ginger, and scallion. Bring to a boil, then reduce to low heat, cover, and simmer for 40 minutes. ⚠️ Note: Add enough water at the start; adding water midway will dilute the flavor. I’ve tried it, and the soup tasted much lighter. - Add the Corn
Add the corn and carrot, and simmer for another 20 minutes until the corn is tender and the ribs fall off the bone. ⚠️ Note: Add the corn and carrot later to keep them sweet and tender. - Season and Serve
Season with salt and a pinch of white pepper just before turning off the heat. Add the goji berries and serve. ⚠️ Note: Add salt at the end for a fresher taste. I’ve tried adding it early, and the rib flavor was lost.

💡 Tips:
The key to Pork Rib and Corn Soup is “clear, sweet broth and tender, fall-off-the-bone meat.” Blanch the ribs in cold water and rinse with warm water. Add enough water at the start and avoid adding more midway. Add the corn later to keep it sweet. Add salt at the end for a fresher taste.
