Tomato Meatball Soup (Tangy, Savory & Comforting)

Tomato Meatball Soup is a comforting and tangy home-style soup. The tomatoes are simmered into a rich, red broth, and the meatballs are tender and juicy. It’s warm, satisfying, and perfect with rice or on its own.

🌴 Ingredients:

· 250g minced pork (fatty and lean)
· 2 tomatoes (cut into chunks)
· 1 egg (added to the meat mixture)
· 1 tbsp cornstarch (about 10g, for the meatballs)

🌴 Aromatics:

· A small piece of minced ginger (for the meatballs)
· 1 stalk chopped scallion (for garnish)

🌴 Seasonings:

· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp cooking wine (about 10ml, for the meatballs)
· 1 tbsp sesame oil (about 10ml)
· 1 tsp sugar (about 5g, to balance the sourness)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Make the Meatballs
In a bowl, combine the minced pork, egg, cornstarch, ginger, light soy sauce, cooking wine, white pepper, and salt. Stir in one direction until the mixture becomes sticky and cohesive. ⚠️ Note: Always stir in one direction, or the meatballs will fall apart in the soup. I’ve tried stirring randomly, and they disintegrated.
  2. Cook the Tomatoes
Heat oil in a pan, add the tomatoes, and stir-fry over medium heat until they release their juice. Add the sugar and a pinch of salt, and mix well. ⚠️ Note: Make sure to cook out the juice for a rich broth. I’ve tried adding water too early, and the soup tasted bland.
  3. Simmer the Soup
Add hot water and bring to a boil. Reduce to low heat, squeeze the meat mixture into balls using your thumb and index finger, and drop them into the soup with a spoon. Cook until the meatballs float, then simmer for another 2 minutes. ⚠️ Note: Use low heat when adding the meatballs, or they will break apart.
  4. Season and Serve
Add the light soy sauce, sesame oil, and salt to taste. Sprinkle with scallion and serve. ⚠️ Note: Add the sesame oil at the very end for the best aroma.
