Stir-fried Eggs with Ham Sausage is a classic, quick home-style dish. The eggs are fluffy and tender, and the ham sausage is savory and slightly crispy. Stir-fried over high heat for that “wok hei” flavor—savory with the rich meaty taste of the ham. Perfect with steamed rice or stuffed in a bun.

🌴 Ingredients:
· 3-4 eggs (beaten)
· 2-3 ham sausages (choose ones with more meat; sliced or cut into chunks)
🌴 Aromatics:
· 2-3 cloves minced garlic (about 10g)
· 1 stalk scallion (chopped, for garnish)
🌴 Seasonings:
· 1 tbsp light soy sauce (about 15ml)
· 1/2 tbsp oyster sauce (about 8g)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Prepare the Ingredients
Crack the eggs into a bowl, add a pinch of salt and white pepper, and beat well. Cut the ham sausages into thin slices or chunks. ⚠️ Note: Add a pinch of salt to the beaten eggs so they have a base flavor. - Scramble the Eggs
Heat oil in a pan, pour in the beaten eggs, and scramble over medium heat until set. Break them into pieces and set aside. ⚠️ Note: Don’t overcook the eggs; keeping them slightly tender is better. I’ve tried cooking them a bit too long, and they became rubbery and dry. - Pan-fry the Ham Sausage
Leave a little oil in the pan, add the ham sausage slices, and pan-fry over medium heat for 1-2 minutes until the edges are slightly golden and fragrant. ⚠️ Note: Pan-frying the ham sausage makes it more fragrant and gives it a crispier texture. - Sauté the Aromatics
Add the minced garlic and stir-fry over low heat until fragrant. ⚠️ Note: Don’t burn it. - Combine and Stir-fry
Add the scrambled eggs back to the pan. Turn to high heat, add 1 tbsp (15ml) light soy sauce, 1/2 tbsp (8g) oyster sauce, and a pinch of sugar. Stir-fry quickly to combine. ⚠️ Note: Keep the heat high to bring out the flavors of the eggs and ham. - Season and Serve
Sprinkle with white pepper and add salt to taste. Stir-fry quickly to combine. Turn off the heat, sprinkle with scallion, and serve hot. ⚠️ Note: Add salt at the very end to keep the eggs tender.
