Stir-Fried Chives, Eggs and Shrimp (Savory, Tender & Easy)

Stir-Fried Chives, Eggs and Shrimp is a classic home-style dish. The shrimp are bouncy, the eggs are tender, and the chives are fragrant. It’s a quick and savory dish, perfect with steamed rice or noodles.

🌴 Ingredients:

· 200g shrimp (fresh, deveined)
· 3 eggs (beaten)
· 1 bunch yellow chives (about 200g, washed and cut into sections)

🌴 Aromatics:

· 3-4 cloves minced garlic
· A small piece of minced ginger

🌴 Seasonings:

· 1 tbsp cooking wine (about 10ml, for marinating)
· 1 tsp cornstarch (about 5g, for marinating)
· A little egg white (for marinating)
· 1 tbsp light soy sauce (about 10ml)
· 1/2 tbsp oyster sauce (about 5ml)
· A pinch of sugar (to enhance freshness)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Marinate the Shrimp
Devein the shrimp, rinse, and drain. Marinate with cooking wine, egg white, cornstarch, salt, and white pepper for 10 minutes. ⚠️ Note: This keeps the shrimp bouncy and tender. I’ve tried skipping the marinating step before, and the shrimp turned out tough and rubbery.
  2. Prepare the Chives
Wash the yellow chives and cut them into 4-5cm sections, separating the stems and leaves. ⚠️ Note: They cook at different speeds, so separating them ensures even cooking.
  3. Scramble the Eggs
Heat oil in the pan, add the beaten eggs, and scramble over medium heat. Set aside. ⚠️ Note: Scramble the eggs separately for a better texture.
  4. Stir-fry the Shrimp
Add the shrimp to the pan and stir-fry over high heat until they turn pink and curl up. Set aside. ⚠️ Note: Don’t overcook them. I’ve tried cooking them too long, and they shrank and became tough.
  5. Sauté the Aromatics
Add minced garlic and ginger to the pan with a little oil. Stir-fry over low heat until fragrant. ⚠️ Note: Don’t burn them.
  6. Stir-fry the Chives
Turn to high heat, add the chive stems first, and stir-fry for 30 seconds. Then add the leaves and stir-fry for another 20 seconds. ⚠️ Note: Keep the heat high to keep them crisp. I’ve tried cooking too long, and they released water and turned soggy.
  7. Combine and Stir-fry
Add the scrambled eggs and shrimp. Add the light soy sauce, oyster sauce, and sugar. Stir-fry quickly over high heat. ⚠️ Note: Keep the heat high for the best “wok hei” flavor.
  8. Season and Serve
Sprinkle with white pepper and add salt to taste. Turn off the heat and serve hot. ⚠️ Note: Taste before adding salt, as both the soy sauce and oyster sauce are salty.
