Garlic Butter King Oyster Mushroom Slices is a quick and easy home-style dish. The mushrooms are pan-fried until crispy on the outside and tender on the inside, coated in rich, fragrant butter and garlic. It’s so good it rivals meat—perfect with steamed rice or as a low-carb meal.

🌴 Ingredients:
· 2-3 king oyster mushrooms (thick and firm)
· 5-6 cloves garlic (minced)
🌴 Aromatics:
· 1 stalk scallion (chopped, for garnish)
· A pinch of crushed black pepper (optional)
🌴 Seasonings:
· 15g butter (about a small piece, the soul of the dish)
· 1 tbsp light soy sauce (about 10ml)
· 1/2 tbsp oyster sauce (about 5ml)
· A pinch of sugar (to enhance flavor)
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Prepare the Mushrooms
Wash the mushrooms and cut them into thin slices about 3mm thick. ⚠️ Note: Thin slices cook faster and get crispier edges. I’ve tried cutting them too thick, and they burned outside while staying raw inside. - Pan-fry the Mushrooms
Heat a little oil in a pan. Add the mushroom slices and pan-fry over medium heat for 2-3 minutes. Once one side is golden and crispy, flip and fry for another 2-3 minutes. ⚠️ Note: Don’t flip too often; let one side set for a better char. I’ve tried flipping frequently, and they released water and turned soggy. - Sauté the Garlic
Push the mushrooms to the side of the pan and add the butter and minced garlic. Stir-fry over low heat until the butter melts and the garlic is fragrant. ⚠️ Note: Keep the heat low, or the butter and garlic will burn and turn bitter. I’ve tried high heat, and the butter turned black, ruining the whole dish. - Combine and Stir-fry
Mix the mushrooms with the garlic butter until evenly coated. Add the light soy sauce, oyster sauce, sugar, and salt. Stir-fry quickly over high heat. ⚠️ Note: Never add water, or it will turn into boiled mushrooms. Keep the heat high for the best texture. - Season and Serve
Sprinkle with black pepper and scallion, and stir quickly. Turn off the heat and serve hot. ⚠️ Note: Add salt at the very end to prevent the mushrooms from releasing water.
