
Garlic Broccoli is a classic and healthy home-style vegetable dish. The broccoli is blanched until vibrant and crisp, then stir-fried with fragrant garlic. It’s simple, light, and delicious—perfect with rice or even steak.

🌴 Ingredients:
· 1 head of broccoli (cut into florets)
🌴 Aromatics:
· 4-5 cloves of garlic (minced)
🌴 Seasonings:
· 1 tbsp light soy sauce (about 10ml)
· 1 tbsp oyster sauce (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Blanch the Broccoli
Bring a pot of water to a boil. Add a pinch of salt and a few drops of oil, blanch the broccoli for 1 minute, then drain and rinse with cold water. ⚠️ Note: Never blanch for too long, or the broccoli will turn yellow and lose its crunch. I’ve tried 3 minutes, and it turned mushy and discolored. - Sauté the Garlic
Heat oil in a pan, add the minced garlic, and stir-fry over low heat until fragrant. ⚠️ Note: Don’t burn the garlic, or it will turn bitter. - Combine and Serve
Turn to high heat, add the blanched broccoli, and add the light soy sauce, oyster sauce, sugar, white pepper, and salt. Stir-fry quickly to combine, and serve. ⚠️ Note: Be quick to keep the broccoli crisp. I’ve tried cooking too long, and it turned soggy.

💡 Tips:
The key to Garlic Broccoli is “vibrant broccoli, rich garlic aroma.” Blanch the broccoli for just 1 minute and rinse with cold water to keep it green. Sauté the garlic over low heat; never burn it. Be quick when combining to keep the broccoli crisp.
