Enoki Mushroom Beef Rolls are a show-stopping dish that’s both beautiful and delicious. The beef fat is absorbed by the enoki mushrooms, making the meat tender and the mushrooms silky. Coated in a rich, savory sauce, each bite is packed with flavor. It’s simple to make but impressive enough for any dinner table.

🌴 Ingredients:
· 200g thinly sliced beef (choose thinner slices)
· 1 bunch enoki mushrooms (about 200g, roots removed and separated)
🌴 Aromatics:
· 4-5 cloves garlic (minced)
· A small piece of ginger (minced)
· 1 stalk scallion (chopped)
· A small pinch of toasted white sesame seeds (for garnish)
🌴 Seasonings:
· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml)
· 1/2 tbsp dark soy sauce (about 5ml, for color)
· A pinch of sugar (to enhance flavor)
· A pinch of crushed black pepper
· 1 tbsp cooking wine (about 10ml)
· 1 tsp cornstarch (about 5g, mixed with water)
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Prepare the Enoki Mushrooms
Remove the roots of the enoki mushrooms, separate them into small bunches, wash, and drain thoroughly. ⚠️ Note: Make sure to drain them well, or they will release water when pan-fried. - Wrap the Beef Rolls
Lay a slice of beef flat on a cutting board. Place a small bunch of enoki mushrooms at one end and roll it up, with the seam facing down. Secure with a toothpick. ⚠️ Note: Keep the seam facing down so they don’t unravel during cooking. I’ve tried it seam-up, and they all fell apart. - Pan-fry the Beef Rolls
Heat a little oil in a pan. Add the beef rolls and pan-fry over medium heat until the beef changes color and the surface is slightly charred. Remove and set aside. ⚠️ Note: Fry the seam side down first, then flip once the shape is set. - Make the Sauce
In a small bowl, mix the light soy sauce, oyster sauce, dark soy sauce, sugar, crushed black pepper, cooking wine, cornstarch slurry, and a pinch of salt. ⚠️ Note: The sugar is key for enhancing the flavor—don’t skip it. - Combine and Serve
Add a little oil to the pan, sauté the minced garlic and ginger until fragrant. Pour in the sauce and cook over medium heat until it bubbles and thickens. Add the beef rolls and stir-fry quickly to coat them evenly. Sprinkle with scallion and sesame seeds, and serve. ⚠️ Note: Be quick to keep the beef tender.

💡 Tips:
The key to Enoki Mushroom Beef Rolls is “tender meat, silky mushrooms, and a rich savory sauce.” Drain the enoki mushrooms thoroughly. Wrap the beef with the seam facing down, and fry the seam side first. A little sugar in the sauce enhances the flavor. Be quick when combining to keep the beef tender.
