Chicken Chow Mein is the king of noodle dishes in Chinese restaurants overseas. The noodles are distinct and flavorful, the chicken is tender, and the crisp vegetables soak up the rich sauce. With high heat and “wok hei,” every bite is incredibly satisfying.

🌴 Ingredients:
· 200g egg noodles (or alkaline noodles)
· 150g chicken thigh meat (shredded)
· 100g bean sprouts
· 1/2 carrot (shredded)
· 2 stalks scallions (cut into segments)
· 2 cloves garlic (minced)
🌴 Seasonings:
· 2 tbsp light soy sauce (about 20ml)
· 1/2 tbsp dark soy sauce (about 5ml, for color)
· 1 tbsp oyster sauce (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Cooking oil, as needed
🌴 Instructions:
- Cook the Noodles
Boil the noodles until 80% cooked (1 minute less than package instructions). Drain, rinse with cold water, drain again, and toss with a little oil to prevent sticking. ⚠️ Note: Never overcook them, or they will turn into a sticky mess. - Marinate the Chicken
Marinate the shredded chicken with a little light soy sauce, white pepper, and 1 tsp of cornstarch for 10 minutes. ⚠️ Note: A little cornstarch keeps the chicken tender. - Stir-fry the Chicken and Veggies
Heat oil in a pan, add the chicken, and stir-fry over high heat until it changes color. Remove and set aside. Add a little oil, sauté the garlic until fragrant, then add the carrots and bean sprouts. Stir-fry over high heat for 1 minute. ⚠️ Note: Don’t overcook the veggies; keep them crisp. - Combine and Season
Add the noodles and chicken back to the pan. Add the light soy sauce, dark soy sauce, oyster sauce, sugar, and white pepper. Stir-fry over high heat until the sauce coats the noodles evenly. Garnish with scallions and serve. ⚠️ Note: High heat is key; never use low heat, or the noodles will stick to the pan. I’ve tried it, and it turned into a mushy mess.

💡 Tips:
The key to Chicken Chow Mein is “high heat, dry and savory noodles.” Cook the noodles to 80% done, rinse with cold water, and toss with oil. Marinate the chicken for extra tenderness. Stir-fry over high heat for the “wok hei” flavor. Feel free to swap the veggies, but bean sprouts and carrots are the classic combo.
