Braised Beef and Shrimp with Luffa and Mushrooms is a creative home-style dish. The luffa is sweet, the mushrooms are tender, the beef is juicy, and the shrimp are bouncy. The mushrooms are pan-fried to release their natural juices, and fish sauce adds umami. The resulting broth is sweet, savory, and rich—perfect with steamed rice or noodles.

🌴 Ingredients:
· 200g beef (tenderloin or leg meat, thinly sliced against the grain)
· 150g shrimp (fresh, deveined)
· 1 luffa (tender, peeled and cut into chunks)
· 200g button mushrooms (uniform in size, sliced)
🌴 Aromatics:
· 4-5 cloves minced garlic
· A small piece of minced ginger
· 3-4 shallots (chopped, for aroma)
· 1 stalk scallion (chopped, for garnish)
🌴 Seasonings:
· 1/2 tbsp fish sauce (for umami, replaces light soy sauce for a clearer broth)
· 1 tbsp light soy sauce (for marinating)
· 1 tbsp oyster sauce
· A little dark soy sauce (for color)
· 1 tbsp cooking wine (for marinating)
· 1 tsp cornstarch (for marinating, locks in moisture)
· 1/2 egg white (for marinating, makes it tender)
· 1 tsp cooking oil (for marinating, prevents sticking)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Cornstarch slurry, as needed (for thickening)
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Marinate the Beef
Slice the beef thinly against the grain. Add the light soy sauce, cooking wine, half an egg white, cornstarch, and 1 tsp of cooking oil. Mix well and marinate for 15 minutes. ⚠️ Note: Cutting against the grain is key; cutting with the grain makes it tough. The egg white and cornstarch lock in moisture for a tender texture. - Marinate the Shrimp
Devein the shrimp, wash, and drain. Add a pinch of salt, white pepper, and cornstarch. Mix well and marinate for 10 minutes. ⚠️ Note: Marinating with cornstarch keeps the shrimp bouncy. - Prepare the Vegetables
Peel the luffa and cut it into chunks. Wash and slice the mushrooms, squeezing out excess water. ⚠️ Note: Soak the luffa in lightly salted water to prevent browning. - Stir-fry the Beef
Heat oil in a pan, add the marinated beef, and stir-fry over high heat until it changes color. Remove immediately and set aside. ⚠️ Note: Don’t overcook the beef; remove it as soon as it changes color. - Pan-fry the Shrimp
Add a little oil to the pan, add the marinated shrimp, and pan-fry over medium heat until they curl and change color. Remove and set aside. ⚠️ Note: Remove the shrimp as soon as they change color to keep them bouncy. - Pan-fry the Mushrooms
Add a little oil to the pan, add the mushroom slices, and pan-fry over medium heat until golden on both sides and their natural juices are released. Remove and set aside. ⚠️ Note: The juices released from the mushrooms are the core of the umami in this dish. - Sauté the Aromatics
Add a little oil to the pan, add the minced garlic, ginger, and shallots, and stir-fry over low heat until fragrant. ⚠️ Note: The shallots greatly enhance the aroma of this dish—don’t skip them. - Braise the Vegetables
Turn to high heat, add the luffa chunks, and stir-fry quickly for 30 seconds. Add the oyster sauce, dark soy sauce, sugar, and fish sauce. Stir well. Add the pan-fried mushrooms and their juices. Cover and braise over medium heat for 2-3 minutes. ⚠️ Note: Braising in the natural moisture of the mushrooms and luffa makes the broth sweeter and more refreshing. - Combine and Braise
Add the cooked beef and shrimp, and stir-fry over high heat for 30 seconds. Add enough hot water to reach halfway up the ingredients. Cover and braise over medium heat for 1-2 minutes to let all the ingredients absorb the broth. ⚠️ Note: Always use hot water; cold water will toughen the beef. - Thicken and Serve
Uncover, turn to high heat to reduce the sauce. Drizzle in the cornstarch slurry and stir-fry quickly until the sauce thickens and coats the ingredients. Sprinkle with white pepper and add salt to taste. Turn off the heat, sprinkle with scallion, and serve hot. ⚠️ Note: Keep the slurry thin. Add salt at the very end so the ingredients don’t release water.

💡 Tips:
Slice the beef thinly against the grain and marinate with egg white and cornstarch for tenderness. Marinate the shrimp with cornstarch for a bouncy texture. Pan-frying the mushrooms releases the core umami of this dish. Stir-fry the beef and shrimp first and add them back at the end—don’t overcook them. Using fish sauce instead of light soy sauce gives a clearer broth and deeper flavor. Add salt at the very end so the ingredients don’t release water.
