Beef and Broccoli (Tender & Savory)

Beef and Broccoli is one of the most popular dishes in Chinese restaurants overseas. The beef is tender and juicy, the broccoli is crisp, and everything is coated in a rich, savory sauce. It’s perfect with steamed rice. With the right marinating technique, you can make restaurant-quality beef and broccoli at home.

🌴 Ingredients:

· 250g beef tenderloin (sliced thinly against the grain)
· 1 head of broccoli (cut into florets)

🌴 Aromatics:

· 3-4 cloves minced garlic
· A small piece of minced ginger
· 1 tbsp cornstarch (for marinating)
· 1/2 egg white (for marinating)

🌴 Seasonings:

· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml, the soul of the dish)
· 1 tbsp cooking wine (about 10ml)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Cooking oil, as needed

🌴 Instructions:

  1. Marinate the Beef
In a bowl, combine the beef slices with 1 tbsp of light soy sauce, 1 tbsp of cooking wine, a pinch of white pepper, 1 tbsp of cornstarch, and half an egg white. Mix well, then add 1 tbsp of cooking oil to lock in the moisture. Marinate for 15 minutes. ⚠️ Note: Never skip the oil; it’s the key to tender beef that doesn’t stick to the pan. I’ve tried it without oil, and the beef turned out tough and clumped together.
  2. Blanch the Broccoli
Bring a pot of water to a boil. Add a pinch of salt and a few drops of oil, blanch the broccoli for 1 minute, then drain and rinse with cold water. ⚠️ Note: Never blanch for too long, or the broccoli will turn yellow and lose its crunch.
  3. Stir-fry the Beef
Heat oil in a pan. Add the marinated beef and stir-fry over high heat until it changes color. Remove immediately. ⚠️ Note: Never overcook the beef; remove it as soon as it changes color.
  4. Combine and Serve
Add a little oil to the pan, sauté the garlic and ginger until fragrant. Add 1 tbsp of oyster sauce, 1 tbsp of light soy sauce, and a pinch of sugar. Stir well. Add the beef and broccoli, and stir-fry over high heat for 30 seconds until coated. Serve. ⚠️ Note: Never stir-fry for too long; just coat the ingredients and serve to keep the beef tender.
