Braised Noodles with Green Beans | Savory, Tender & Satisfying

Braised Noodles with Green Beans is a classic northern Chinese dish. The noodles soak up all the savory sauce, the green beans are tender, and the pork belly is crispy. Using the “gradual broth drizzle” method keeps the noodles moist without drying out. A handful of minced garlic at the end adds a burst of aroma. A complete meal in one pot.

🌴 Ingredients:

· 300g fresh noodles (thin fresh-cut noodles absorb flavor better)
· 300g green beans (trimmed and snapped into segments)
· 150g pork belly (skin-on for a richer flavor)

🌴 Aromatics:

· 1 large piece of ginger (sliced)
· 1 whole head of garlic (peeled and smashed, reserve a few cloves for mincing at the end)
· 1 section of scallion (cut into sections)
· 2 star anise
· 2-3 dried red chilies (optional, for flavor)

🌴 Seasonings:

· 3 tbsp light soy sauce
· 1 tbsp dark soy sauce (for color)
· 1 tbsp oyster sauce
· 1 tbsp cooking wine
· 1 tsp sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Prepare the Ingredients
Trim the ends of the green beans, snap them into 4-5cm segments, wash, and drain. Slice the pork belly thinly. ⚠️ Note: Make sure the green beans are completely dry, or they will splatter when added to the hot pan.
  2. Stir-fry the Pork Belly
Heat a little oil in a pan. Add the pork belly slices and stir-fry over medium heat until they change color, release oil, and the edges are slightly charred. Remove and set aside, leaving a little oil in the pan. ⚠️ Note: Fry the pork belly until crispy; the rendered oil adds flavor to the dish.
  3. Sauté the Aromatics
Add the ginger slices, garlic, scallion sections, star anise, and dried chilies to the pan. Stir-fry over low heat until fragrant. ⚠️ Note: Don’t burn them.
  4. Stir-fry the Green Beans
Turn to high heat, add the green beans, and stir-fry quickly for 2-3 minutes until they change color and the edges wrinkle slightly. Add the light soy sauce, dark soy sauce, oyster sauce, cooking wine, and sugar. Stir-fry until combined. ⚠️ Note: Cook the green beans thoroughly to bring out their flavor and ensure they become tender.
  5. Simmer with Water
Pour in enough hot water to cover the green beans (use hot water, or the beans will become tough). Add the cooked pork belly. Bring to a boil, then reduce to medium heat, cover, and simmer for 5 minutes. Once done, scoop out half a bowl of the broth and set aside. ⚠️ Note: Use plenty of water; the reserved broth will be drizzled over the noodles later.
  6. Add the Noodles
Uncover and spread the fresh noodles evenly over the green beans, keeping them in a flat layer rather than a thick pile. Cover and simmer over low heat for 8-10 minutes. ⚠️ Note: Don’t stir the noodles; just let them steam.
  7. Drizzle the Broth
After 7-8 minutes of steaming, drizzle the reserved half-bowl of broth around the edge of the pan in 2-3 batches. Cover and continue to steam after each addition. ⚠️ Note: Drizzling in batches keeps the noodles moist and flavorful without burning the bottom.
  8. Mix and Serve
Uncover and use chopsticks to mix the noodles, green beans, and pork belly together. Sprinkle with minced garlic and turn to high heat to reduce the sauce slightly. Sprinkle with white pepper and add salt to taste. Turn off the heat, sprinkle with scallion, and serve hot. ⚠️ Note: Adding the minced garlic at the very end gives the dish a fresh, strong garlic aroma.

💡 Tips:
Fry the pork belly until crispy for extra flavor. Cook the green beans thoroughly so they become tender and absorb the sauce. Use hot water for simmering, as cold water will toughen the beans. Reserve half a bowl of broth and drizzle it over the noodles in batches while steaming for a moist, flavorful result. Spread the noodles evenly over the beans and let them steam without stirring to keep them distinct. Add the minced garlic at the very end for the best aroma.
