Spicy Golden Coin Eggs (Savory, Spicy & Addictive)

Spicy Golden Coin Eggs is a classic Hunan-style dish. Sliced boiled eggs are pan-fried until golden and crispy, then tossed in a spicy and savory sauce with green and red chilies. It’s a perfect dish to serve with steamed rice.

🌴 Ingredients:

· 4-5 eggs (hard-boiled)
· 3-4 green chilies (sliced)
· 2 red chilies (sliced, for color)

🌴 Aromatics:

· 4-5 cloves minced garlic
· A small piece of minced ginger
· 1 tsp fermented black beans (the soul of the dish)
· 1 scallion (chopped, for garnish)

🌴 Seasonings:

· 2 tbsp light soy sauce (about 20ml)
· 1 tbsp oyster sauce (about 10ml)
· A little dark soy sauce (for color)
· 1 tbsp cooking wine (about 10ml)
· A pinch of sugar (to enhance freshness)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed

🌴 Instructions:

  1. Prepare the Eggs
Hard-boil the eggs, peel them, and cut them into 1cm thick slices. ⚠️ Note: Dip the knife in water before slicing to prevent sticking. I’ve tried slicing them without wetting the knife, and the yolks stuck everywhere.
  2. Pan-fry the Eggs
Heat oil in a pan, add the egg slices, and pan-fry over medium heat until golden and crispy on both sides. Set aside. ⚠️ Note: Don’t flip them too often, or the yolks will fall apart. I’ve tried flipping them frequently, and they broke into pieces.
  3. Sauté the Aromatics
Add the minced ginger, garlic, fermented black beans, and chilies to the pan with a little oil. Stir-fry over low heat until fragrant. ⚠️ Note: Don’t skip the fermented black beans. I’ve tried it without them, and the flavor was flat.
  4. Combine and Stir-fry
Turn to high heat, add the fried egg slices, and stir-fry for 30 seconds. Add the light soy sauce, oyster sauce, dark soy sauce, and sugar. Stir gently. ⚠️ Note: The egg slices break easily, so be gentle. I’ve tried stirring too hard, and they turned into a mess.
  5. Season and Serve
Sprinkle with white pepper and add salt to taste. Turn off the heat, garnish with scallion, and serve hot. ⚠️ Note: Taste before adding salt, as both the fermented black beans and soy sauce are salty.
