Vinegar Stir-fried Cabbage is a classic, quick home-style dish. The cabbage shreds are crisp and flavorful, with a tangy aroma and a hint of spice. Vinegar is added in two stages for a deeper flavor. Stir-fried over high heat for that “wok hei” flavor—tangy, spicy, and appetizing. Perfect with steamed rice or noodles.

🌴 Ingredients:
· 1/2 head of cabbage (choose a firm, heavy one for the best crunch)
· 3-4 dried red chilies (cut into segments, for heat)
· 4-5 cloves garlic (sliced)
· 1 stalk scallion (chopped, for garnish)
🌴 Aromatics:
· A small piece of minced ginger
· A small pinch of Sichuan peppercorns
· A pinch of five-spice powder (optional, for extra aroma)
🌴 Seasonings:
· 2-3 tbsp Chinkiang vinegar (added in two stages, the soul of the dish)
· 1 tbsp light soy sauce
· 1 tbsp oyster sauce
· 1 tsp sugar (to enhance flavor and balance the sourness)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Prepare the Cabbage
Remove the outer leaves, cut the cabbage in half, remove the core, and slice it thinly on a diagonal. Do not rinse after cutting. If needed, wipe the surface with a damp cloth, then let it dry completely. ⚠️ Note: Never rinse the cabbage after cutting; excess water will turn it into “boiled cabbage” and ruin the texture. - Sauté the Aromatics
Heat oil in a pan. Add the garlic slices, minced ginger, dried chilies, and Sichuan peppercorns. Stir-fry over low heat until fragrant. Sprinkle in a little five-spice powder and stir well. ⚠️ Note: Don’t burn them. - Stir-fry the Cabbage
Turn to high heat, add the cabbage shreds, and stir-fry quickly for 1-2 minutes until softened and slightly translucent at the edges. Add the light soy sauce, oyster sauce, and sugar. Pour 1 tbsp of vinegar around the edge of the pan and stir-fry until combined. ⚠️ Note: Keep the heat high to keep the cabbage crisp. The first addition of vinegar releases its aroma. - Season and Serve
Pour another 1-2 tbsp of vinegar around the edge of the pan. Sprinkle with white pepper and add salt to taste. Stir-fry quickly to combine. Turn off the heat, sprinkle with scallion, and serve hot. ⚠️ Note: Adding the vinegar at the very end preserves its tanginess. Adding it in two stages creates a more complex flavor.

💡 Tips:
Slice the cabbage on a diagonal for a crispier texture. Never rinse the cabbage after cutting—excess water makes it soggy. Keep the heat high for the best crunch. Add the vinegar in two stages: the first to release its aroma, and the second at the end for a bright tang. Add salt at the very end to prevent the cabbage from releasing water. For extra heat, add a few small spicy chilies when stir-frying.
