Garlic Stir-fried Greens (Crisp, Savory & Easy)

Garlic Stir-fried Greens is the most popular vegetable dish in Chinese restaurants. The greens are vibrant and crisp, infused with rich garlic aroma. It’s simple but relies on high heat and quick stir-frying. With the right technique, you can achieve restaurant-quality greens at home.

🌴 Ingredients:

· 400g leafy greens (such as bok choy, Shanghai bok choy, or water spinach, washed and drained)
· 4-5 cloves of garlic (minced)

🌴 Aromatics:

· A small piece of minced ginger (optional)
· 2 dried red chilies (cut into segments, optional)

🌴 Seasonings:

· 1 tbsp light soy sauce (about 10ml)
· 1 tbsp oyster sauce (about 10ml)
· A pinch of sugar (to enhance flavor)
· Salt, to taste (add at the end)
· Cooking oil, as needed

🌴 Instructions:

  1. Prepare the Greens
Wash the greens and drain thoroughly. Cut them into large segments, separating the stems and leaves. ⚠️ Note: Make sure to drain them well, or the oil will splatter and the dish will turn watery. I’ve tried it without draining, and the greens turned out soggy.
  2. Sauté the Garlic
Heat oil in a pan, add the minced garlic, ginger, and dried chilies. Stir-fry over low heat until fragrant. ⚠️ Note: Don’t burn the garlic, or it will turn bitter.
  3. Stir-fry over High Heat
Turn to high heat, add the stems first, and stir-fry quickly for 30 seconds. Add the leaves and continue stir-frying over high heat for 1 minute until softened and vibrant green. ⚠️ Note: Stir-fry over high heat the entire time to keep the greens crisp. I’ve tried low heat, and they turned yellow and mushy.
  4. Season and Serve
Add the light soy sauce, oyster sauce, and a pinch of sugar. Stir-fry quickly to combine. Season with salt at the very end, and serve immediately. ⚠️ Note: Always add salt at the end; adding it early will draw out water. I’ve tried it, and it turned into a soupy mess.

💡 Tips:
The key to Garlic Stir-fried Greens is “high heat, quick stir-fry, and salt at the end.” Drain the greens thoroughly and separate the stems from the leaves. Stir-fry over high heat the entire time for a crisp texture. Add salt at the very end to prevent water from releasing. Don’t skip the garlic.
