
Beef and Green Bean Fried Rice is a hearty and easy home-style dish. The beef is tender, the green beans are crisp, and the rice is loose and flavorful, coated in a rich, savory sauce. Every bite is a perfect blend of meat, veggies, and rice.

🌴 Ingredients:
· 2 bowls of day-old cooked rice (loose and fluffy)
· 150g beef tenderloin (diced against the grain)
· 100g green beans (finely diced)
· 2 eggs (beaten)
🌴 Aromatics:
· 3-4 cloves minced garlic
· A small piece of minced ginger
· 1 tbsp cornstarch (for marinating)
🌴 Seasonings:
· 2 tbsp light soy sauce (about 20ml)
· 1/2 tbsp dark soy sauce (about 5ml, for color)
· 1 tbsp oyster sauce (about 10ml)
· 1 tbsp cooking wine (about 10ml, for marinating)
· A pinch of sugar (to enhance flavor)
· A pinch of white pepper powder
· Salt, to taste
· Cooking oil, as needed
🌴 Instructions:
- Marinate the Beef
Combine the diced beef with light soy sauce, cooking wine, white pepper, and cornstarch. Mix well and marinate for 15 minutes. ⚠️ Note: The cornstarch keeps the beef tender. I’ve tried it without, and the beef turned out tough. - Stir-fry the Eggs and Beef
Beat the eggs with a pinch of salt. Heat oil in a pan, scramble the eggs until set, and set aside. Add a little more oil, add the diced beef, and stir-fry over high heat until it changes color. Set aside. ⚠️ Note: Don’t overcook the beef; remove it as soon as it changes color. - Stir-fry the Green Beans
Add a little more oil to the pan, sauté the garlic and ginger until fragrant. Add the diced green beans and stir-fry over medium heat for 2 minutes until softened and darkened. ⚠️ Note: Make sure the green beans are fully cooked, as undercooked beans can be toxic. I’ve tried it, and it caused a stomachache. - Combine and Serve
Add the rice and stir-fry over medium-high heat. Press and break up the rice until it’s loose and slightly dry. Add the scrambled eggs and beef, then add the light soy sauce, dark soy sauce, oyster sauce, and sugar. Stir-fry over high heat to combine. Serve. ⚠️ Note: Stir-fry the rice until it’s loose and dry for the best texture. I’ve tried low heat, and the rice just got wetter.

💡 Tips:
The key to Beef and Green Bean Fried Rice is “tender beef, crisp beans, and loose rice.” Marinate the beef with cornstarch for tenderness. Make sure the green beans are fully cooked to avoid toxins. Stir-fry the rice until it’s loose and dry. Use high heat for the best texture.
